Under the name of tempura we are faced with a wonderful culinary preparation coming directly from Japan, where in fact its elaboration is extremely common. Basically it consists in batter a certain food with a fine mass of flour, then fry it in plenty of oil, which must be very hot (at 180 ºC).

We must differentiate it from the traditional batter or breaded we usually do in our homes, since in its preparation only flour is used (instead of adding breadcrumbs), and also fry in oil only for two or three minutes. This allows to enjoy a fine and delicate crunch, which combines perfectly if in its preparation we use mostly vegetables and other vegetables.

  • 1 red pepper
  • 1 green pepper
  • 2 carrots
  • 1 zucchini
  • 5 mushrooms
  • 40 g of wheat flour
  • 160 cl of very cold water
  • 1 egg
  • 1 l olive oil
  • Salt


Thoroughly wash all the vegetables, especially the carrots and zucchini, dry them and chop the peppers by cutting them into sticks. Remove the top of the carrot and zucchini, and also the bottom of the carrot. Cut them also in sticks.

Wash the mushrooms well to remove any excess soil they may have. Then cut them in half.

Season all the ingredients to taste, and let stand for 1 hour.

After the hour we will proceed to the preparation of this wonderful and crispy tempura. To do this, place the egg, salt and very cold water in a deep dish (this is very important). Beat everything very well. Then sift the flour and add it. It removes well, although this time it does not matter if there are some lumps left.

Put plenty of olive oil in a pan, and when it is hot, it is time to fry our tempura. To do this, submerge the vegetables in the flour mixture that we have prepared previously, drain them a little, and gradually fry them. To finish, drain on absorbent paper to remove the excess oil.

How to prepare the yogurt sauce?

Although traditionally the tempura of vegetables is usually accompanied with soy sauce, the truth is that other sauces are very good, like the yogurt sauce that we propose on this occasion. Do you want to learn how to prepare it? Take note of the ingredients you need and the steps to follow. It is extremely easy:

  • Ingredients: 1 Greek yogurt, fresh dill, 3 cloves of garlic, 1 lemon, 3 tablespoons of olive oil, salt and ground white pepper.
  • preparation: Wash the dill well and chop it very finely. Peel the garlic, cut them in half, remove the germ and mash them well in a mortar. Wash the lemon and grate your skin over the garlic, then squeeze one half and sprinkle the crushed garlic. Spice and water with olive oil. Stirs well. Add the Greek yogurt and continue mixing until you get a creamy sauce.

Finally, you just have to serve the vegetable tempura accompanied with this delicate yogurt sauce. To enjoy!.
