Popularly known with the names of pancaque , pancake Or simply Pancakes , they consist of a delicious flat bread with a sweet flavor and a round shape , which is usually made with eggs, flour, butter, milk, sugar, yeast and salt, and it is very common to add a species, an extract (such as cinnamon or vanilla extract) or an essence.
They come from Siberia, and their great versatility make it an ideal dish to eat at any time of day, although the most common is to consume them in the dessert when they are sweet, or in meals, lunches and snacks if they are salty.
What are your differences with the crepe? Very simple: the main difference is that the pancake is smaller in diameter (it has 10 centimeters instead of the 16 centimeters usually presented by the pancake), it is made with yeast and cooked over medium heat.
How to make pancakes?
1. Basic pancake recipe
- 225 gr. of common flour
- 4 teaspoons of baking powder
- 200 ml. milk
- 1 large egg
- 40 gr. of sugar
- Butter (to brown the pancakes in the pan) + 30 gr. of butter
Steps to make the pancakes
First melt the butter in a saucepan, then let it cool. While the butter is on the heat, lightly beat the egg in a small bowl. In another bowl sift the flour together with the yeast. To this bowl add the sugar and mix well with the flour until everything is very well distributed. In a jug beat the milk and the egg and mix well.
Using a spoon, make a hole in the center of the ingredients where the flour, yeast and sugar are. Pour a little of the egg mixture in the center of the hole and beat. Do the same again with the rest of the liquid mixture, to finally return to beat again until all the ingredients combine well. To finish, add the melted butter and beat well until the mixture is homogeneous.
Now put a pan of pancakes to heat over medium heat and when it is hot, melt a little butter in it. It is time to pour a tablespoon of the liquid mass, giving it a rounded shape (just drop the liquid in the center of the dough so that it is scattered alone as it falls). Continue adding tablespoons of dough, always leaving space between them since they will tend to grow a little. Just when they start appearing bubbles that burst and leave holes in the top is the time to turn them over, carefully with the help of a spatula.
Continue cooking for 1 to 2 more minutes until golden brown on the other side. Remove the pancakes and repeat the process until you finish with the dough.
2. Recipe of pancakes with blueberries
Also popularly known by the name of American pancakes , they become a traditional recipe that is originally made alone, being very common to serve them in a pile with a piece of butter on the top and battered in honey. On this occasion we have preferred to add blueberries. Delicious!
- 200 gr. Of flour
- 2 teaspoons of yeast
- 2 large eggs
- 30 gr. of butter + for frying
- 45 gr. of sugar
- 1 glass of milk (250 ml)
- 150 gr. of fresh blueberries
- 1 splash of vanilla essence

Melt the 30 grams of butter in a saucepan, and once melted let it cool. Meanwhile, in a small bowl or cup, beat the eggs lightly. Let stand. In another larger bowl sift the flour along with the yeast. Add the sugar to this mixture and mix well again.

- 1 glass of milk
- 1 large egg
- 2 tablespoons of butter + butter for frying
- 200 gr. of carrot
Steps to make carrot pancakes
In a saucepan melt the butter and then let cool. In the same bowl, sift the two types of flour, the yeast, the mashed sugar and add a pinch of salt. Add the milk, the melted butter and the egg, and beat well until you get a well-mixed, homogeneous paste.
Wash and peel the carrots and rake them. Add them to the previous mixture, mix a little, and let the dough rest for 5 to 8 minutes.
