- 9 fresh artichokes
- 60 g of flour
- 5 eggs
- The juice of 1 lemon
- 130 ml extra virgin olive oil
- Ground black pepper
First try to clean the artichokes a little, especially if they have some dirt. Then carefully cut the top of these, and remove the leaves plus doubts. Now cut the stem through the base. Wash them, cut them into four pieces and reserve.
Split the lemon in half and squeeze it to get your juice. Put it in a bowl with cold water and add the sliced artichokes, leaving them to soak for 15 minutes. After this time, drain and dry them.
Put flour in a large bowl and coat the artichokes in it.
Put olive oil in a large pan and, when hot, fry the artichokes little by little until you notice that they are lightly browned. Then squeeze them on absorbent paper.
Beat the eggs lightly in a bowl. Then add the ground pepper and salt. Remove the oil once cold. Now put two tablespoons of oil in the same pan and, when hot, put the artichokes and then the beaten egg. Let it cook well for 5 minutes. Carefully turn it over and set it on the other side. List!.
